Ingredients

- 1 ½ cups of all-purpose flour
- 1 teaspoon of baking soda
- ½ teaspoon of salt
- 1 cup of pumpkin puree (not pumpkin pie filling)
- ½ cup of granulated sugar
- 1 cup of semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium-sized bowl, whisk together the flour, baking soda, and salt.
- In a separate large bowl, combine the pumpkin puree and granulated sugar until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the chocolate chips using a spatula or wooden spoon.
- Using a cookie scoop or a spoon, drop rounded tablespoons of dough onto your prepared baking sheet, leaving about 2 inches between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
