A comforting casserole combining the rich flavors of beef with creamy, cheesy potatoes, perfect for busy weeknights or lazy weekends.
Ingredients

- 1.5 lbs ground beef
- 4 cups diced potatoes
- 2 cups shredded cheese
- 1 can (10.5 oz) cream of mushroom soup
Instructions
- Prepare the Slow Cooker: Spray the inside of your slow cooker with non-stick cooking spray or line it with a slow cooker liner for easy cleanup.
- Brown the Beef: In a skillet over medium-high heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain excess grease and set aside.
- Layer the Ingredients: Place the diced potatoes in the bottom of the slow cooker. Spread the cooked ground beef over the potatoes evenly.
- Add Cheese and Soup: Pour the cream of mushroom soup over the beef and potatoes, then sprinkle the shredded cheese on top. Do not stir.
- Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. The potatoes should be tender when done.
- Serve: Once cooked, spoon out portions onto plates and enjoy warm. Garnish with fresh herbs if desired.
