A delightful and refreshing dessert bursting with the bright flavors of oranges and creamy sweetness reminiscent of a creamsicle.
Ingredients
Scale:
- 2 cups of mini marshmallows
- 1 cup of shredded coconut (optional)
- 1 (15 oz) can of mandarin oranges, drained
- 1 (8 oz) tub of whipped topping (like Cool Whip)
- 1 (3 oz) package of instant vanilla pudding mix
- 1 cup of orange juice (freshly squeezed for best results)
- Fresh orange slices, for garnish
- Additional mini marshmallows, optional
Instructions
- In a large mixing bowl, combine the instant vanilla pudding mix and orange juice. Whisk until the mixture is smooth and well blended.
- Gently fold in the whipped topping until fully incorporated.
- Add the mini marshmallows and mandarin oranges to the bowl. If using shredded coconut, fold that in as well.
- Transfer the salad into a serving bowl or individual cups.
- Cover with plastic wrap and refrigerate for at least 30 minutes.
- Before serving, garnish with fresh orange slices and additional mini marshmallows, if desired.
