Ingredients

- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup 7UP soda
- ½ cup vegetable oil
- 3 large eggs
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
- 1 cup powdered sugar
- 2 tablespoons lemon juice (for glaze)
- 1 tablespoon milk (optional, for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- Add the 7UP soda, vegetable oil, eggs, lemon zest, and lemon juice to the bowl. Mix on medium speed for about 2 minutes until smooth.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- In a small bowl, mix the powdered sugar, lemon juice, and optional milk until smooth to make the glaze.
- Drizzle the glaze over the cooled cake.
