Ingredients
Scale:
4 bone-in or boneless pork chops (1-inch thick)
1 cup apple cider (preferably fresh)
2 tablespoons apple cider vinegar
3 tablespoons brown sugar
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil (for cooking)
Fresh thyme leaves (optional)
Additional apple slices (optional)
Instructions
In a mixing bowl, combine the apple cider, apple cider vinegar, brown sugar, Dijon mustard, minced garlic, ground cinnamon, salt, and black pepper. Whisk together until the sugar is fully dissolved and the mixture is well blended.
Place the pork chops in a resealable plastic bag or a shallow dish. Pour the marinade over the pork chops, ensuring they are well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for at least 1 hour, preferably 4–6 hours.
Heat a large skillet over medium-high heat. Add the olive oil and allow it to heat until it shimmers.
Remove the pork chops from the marinade, allowing the excess to drip off. Reserve the marinade for later use. Add the pork chops to the hot skillet, searing them for about 4–5 minutes on each side, or until they achieve a golden brown crust.
Once the pork chops are seared, remove them from the skillet and set aside on a plate. Pour the reserved marinade into the skillet, scraping up any browned bits from the bottom. Allow it to simmer for about 5 minutes, reducing until slightly thickened.
Return the pork chops to the skillet, spooning the glaze over them. Cook for an additional 2–3 minutes, letting the glaze adhere to the pork chops.
Transfer the glazed pork chops to a serving platter, drizzling with any remaining glaze from the skillet. Garnish with fresh thyme leaves and apple slices if desired.
