2 ½ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon salt
¾ cup granulated sugar
½ cup brown sugar, packed
2 large eggs
1 cup unsweetened applesauce
½ cup vegetable oil or melted butter
1 teaspoon vanilla extract
2 medium-sized apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)
1 teaspoon lemon juice
½ cup powdered sugar (for dusting)
2 tablespoons milk (to make a glaze, if desired)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, toss the diced apples with lemon juice.
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
In a separate bowl, whisk together the granulated sugar, brown sugar, eggs, applesauce, vegetable oil (or melted butter), and vanilla extract until smooth.
Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
Gently fold the prepared apples into the batter.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
Bake in the preheated oven for 60-70 minutes or until a toothpick inserted into the center comes out clean.
Remove the bread from the oven and let it cool in the pan for about 10-15 minutes before transferring it to a wire rack to cool completely.
If desired, mix the powdered sugar with milk to create a glaze and drizzle it over the cooled bread.
