1 teaspoon baking soda
1 teaspoon baking powder

1 cup granulated sugar
½ cup brown sugar, packed
¾ cup vegetable oil or melted coconut oil
3 large eggs
1 teaspoon vanilla extract
2 cups peeled and diced apples (about 2 medium apples)
1 cup chopped walnuts
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or line it with parchment paper for easier removal.
In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
In another bowl, beat together the granulated sugar, brown sugar, and oil until well combined. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
Fold in the diced apples and chopped walnuts gently into the batter until evenly distributed.
Pour the batter into the prepared baking pan and spread it evenly. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
