  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine the apricot preserves, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, ground ginger, salt, and pepper. Mix until well blended.
  3. Pat the chicken pieces dry with paper towels. Season both sides of the chicken generously with salt and pepper.
  4. Place the chicken thighs and breasts in a large oven-safe baking dish, skin side up.
  5. Generously brush the apricot glaze over the chicken, reserving some for later basting.
  6. Bake for about 30 minutes. After 30 minutes, baste with the reserved glaze and bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
