A vibrant and fresh salad featuring mixed lettuce, tomatoes, cucumbers, olives, and a homemade dressing, ideal for any occasion.
Ingredients

4 cups of mixed lettuce (Romaine, arugula, and spinach)
1 cup cherry tomatoes, halved
1 large cucumber, thinly sliced
1 red onion, thinly sliced
1 bell pepper (red or yellow), chopped
1/2 cup Kalamata olives, pitted and sliced
1/4 cup feta cheese, crumbled
1/4 cup toasted pine nuts
Salt and pepper to taste
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Wash and dry the lettuce leaves thoroughly. Tear them into bite-sized pieces and place them in a large salad bowl. Add the halved cherry tomatoes, sliced cucumber, red onion, and chopped bell pepper. Mix gently to combine.
Gently fold in the sliced Kalamata olives and crumbled feta cheese. Ensure the olives are evenly distributed.
In a small bowl, whisk together the olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, and dried oregano. Season with salt and pepper to taste. Continue whisking until the dressing is well emulsified.
Pour the dressing over the salad, and toss gently to ensure all ingredients are well coated.
Just before serving, sprinkle the toasted pine nuts over the salad.
Transfer the salad to a serving platter or individual bowls. Serve immediately.
