Ingredients

- 4 cups fresh green peas (about 2 pounds, shelled)
- 6 slices of thick-cut bacon
- 1 cup chopped red onion
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cherry tomatoes, halved
- 1 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 2 teaspoons sugar
- Salt and pepper to taste
Instructions
- In a large skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove and crumble into bite-sized pieces.
- Bring a pot of water to boil, add peas, and cook for 2-3 minutes. Drain and rinse under cold water.
- In a large bowl, combine the cooked peas, crumbled bacon, chopped red onion, shredded cheddar cheese, and halved cherry tomatoes.
- In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
- Pour the dressing over the salad mix and gently toss until all ingredients are well coated.
- Cover and refrigerate for at least 30 minutes before serving.
