  1. In a large skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Remove and crumble into bite-sized pieces.
  2. Bring a pot of water to boil, add peas, and cook for 2-3 minutes. Drain and rinse under cold water.
  3. In a large bowl, combine the cooked peas, crumbled bacon, chopped red onion, shredded cheddar cheese, and halved cherry tomatoes.
  4. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and pepper until well combined.
