Ingredients
Scale:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
4 large eggs
2 teaspoons vanilla extract
1/2 cup buttermilk
1 cup mixed nuts (walnuts, pistachios, and almonds), finely chopped
1/2 cup brown sugar
1 teaspoon ground cinnamon
1 cup granulated sugar (for syrup)
1/2 cup water
1/2 cup honey
1 teaspoon vanilla extract (for syrup)
1 teaspoon lemon juice
Instructions
Preheat your oven to 350°F (175°C). Grease a 10-inch Bundt pan with butter or non-stick cooking spray.
In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and salt until well combined.
In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until combined.
Gradually add the flour mixture to the butter mixture, alternating with the buttermilk. Start and finish with the flour mixture. Mix until just combined.
In a separate bowl, combine the chopped mixed nuts, brown sugar, and ground cinnamon until evenly mixed.
Pour half of the cake batter into the prepared Bundt pan. Sprinkle the nut filling evenly over the batter. Top with the remaining batter.
Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking, combine the granulated sugar, water, honey, vanilla extract, and lemon juice in a saucepan over medium heat. Stir until the sugar is dissolved. Allow it to simmer for about 10 minutes, then remove from heat and let it cool slightly.
