A warm, bubbling cobbler featuring juicy blackberries and a sweet, buttery topping, perfect for summer desserts.
Ingredients
Scale:
4 cups fresh blackberries (washed and drained)
1 cup granulated sugar (for filling)
2 tablespoons cornstarch
1 tablespoon lemon juice
1 teaspoon vanilla extract (for filling)
1/4 teaspoon salt (for filling)
1 cup all-purpose flour
1 cup granulated sugar (for topping)
1 tablespoon baking powder
1/2 teaspoon salt (for topping)
1/2 cup whole milk
1/2 cup unsalted butter (melted)
1 teaspoon vanilla extract (for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, combine the blackberries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Toss to coat and let it sit for about 10 minutes.
In a separate bowl, whisk together flour, sugar, baking powder, and salt. Add in the milk, melted butter, and vanilla extract. Mix until just combined.
Pour the blackberry mixture into a greased 9x13-inch baking dish. Spoon the cobbler topping over the blackberries, leaving some areas exposed.
Bake for 45-50 minutes, or until the topping is golden brown and the blackberry filling is bubbling.
Cool for about 15 minutes before serving. Serve warm, optionally with vanilla ice cream.
