2 cups cooked jasmine rice (preferably day-old for the best texture)
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 teaspoon sesame oil
1 pound beef (flank steak or sirloin), thinly sliced
1 cup mixed vegetables (peas, carrots, corn)
1 small onion, diced
2 green onions, sliced (for garnish)
2 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons vegetable oil (for frying)
2 large eggs (optional, for added protein and texture)
Instructions
Start by preparing your ingredients. Thinly slice the beef against the grain and set it aside.
In a small bowl, mix together soy sauce, oyster sauce (if using), and sesame oil. Set this sauce aside for later.
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the sliced beef and stir-fry for about 2-3 minutes until browned and just cooked through. Remove the beef from the pan and set aside.
Add the remaining tablespoon of oil to the pan. Sauté the diced onion, minced garlic, and ginger for about 1 minute until fragrant.
Stir in the mixed vegetables and cook for an additional 2-3 minutes until they are tender.
If using eggs, push the vegetable mixture to one side of the pan, crack the eggs into the other side, and scramble them until fully cooked. Then, mix everything together.
Add the cooked rice to the pan, breaking up any clumps. Stir well to combine all ingredients.
Return the cooked beef to the pan. Pour the sauce mixture over the rice and stir-fry everything together for another 2-3 minutes. Ensure the rice is heated through and well coated with the sauce.
