1 medium onion, diced

1 can (14.5 oz) diced tomatoes, undrained
4 cups beef broth
2 cups water
1 cup elbow macaroni
2 teaspoons Italian seasoning

1 tablespoon olive oil
Grated Parmesan cheese (optional)
Chopped fresh parsley (optional)

Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic to the pot, stirring for an additional minute until fragrant.
Incorporate the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink, approximately 5-7 minutes.
Drain any excess fat from the pot, if necessary, then add the diced tomatoes (with their juice), beef broth, and water. Stir to combine all the ingredients thoroughly.
Bring the mixture to a boil, then reduce the heat to a simmer. Add the Italian seasoning, and season with salt and pepper to taste. Simmer for at least 10 minutes.
