A sweet and tangy treat that combines the freshness of blueberries with the richness of cream.
Ingredients
Scale:
1 cup fresh or frozen blueberries
1 cup heavy cream
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/4 teaspoon lemon zest
2 tablespoons unsalted butter
1 cup whipped cream (optional)
Instructions
In a medium saucepan, combine the blueberries, granulated sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture comes to a boil.
Reduce the heat to low and simmer for 5-7 minutes, or until the blueberries have broken down and the mixture has thickened.
Remove the saucepan from the heat and stir in the vanilla extract and lemon zest. Let the mixture cool to room temperature.
In a separate bowl, whip the heavy cream until it forms stiff peaks. Set aside.
In a separate saucepan, melt the unsalted butter over low heat. Add the cooled blueberry mixture and stir until well combined.
Pour the blueberry mixture into individual serving cups or a large serving dish. Top with whipped cream, if desired.
Refrigerate the dessert for at least 30 minutes to allow the flavors to meld together. Serve chilled.
