2 cups fresh blueberries (or frozen, thawed and drained)
1 cup mini marshmallows
1 cup whipped cream (store-bought or homemade)
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1/2 cup chopped pecans or walnuts (optional)
Extra blueberries for garnish
Chopped nuts for garnish
Mint leaves for freshness
Instructions
In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer on medium speed to blend until smooth and creamy, about 2-3 minutes.
Gently fold in the whipped cream into the cream cheese mixture.
Carefully add the fresh blueberries and mini marshmallows to the mixture. Use a spatula to gently fold the ingredients together until evenly distributed.
If you’re including chopped nuts, fold them into the mix.
Transfer the mixture to a serving bowl or individual cups and cover with plastic wrap. Chill in the refrigerator for at least 1 hour before serving.
