1 cup pastina (small pasta)
2 cups fresh broccoli florets (or frozen, thawed)
1 small onion, finely chopped
2 cloves garlic, minced
4 cups vegetable broth
1 cup whole milk (or heavy cream)
1 ½ cups sharp cheddar cheese, shredded (plus extra for topping)
Salt and pepper, to taste
1 teaspoon dried thyme (optional)
1 tablespoon olive oil or butter
Instructions
In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then, add the minced garlic and continue to sauté for an additional minute.
Add the broccoli florets to the pot and sauté for another 3-4 minutes until they turn bright green and slightly tender.
Pour in the vegetable broth and bring the mixture to a boil. Once boiling, add the pastina and dried thyme (if using). Stir well to combine and reduce the heat to a simmer.
Allow the pastina to cook for about 6-8 minutes or until al dente, stirring occasionally to prevent sticking.
