- 1/2 teaspoon salt
- 1/2 cup chopped walnuts (optional)
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine vegetable oil and eggs. Mix until well blended.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in grated carrots, crushed pineapple, and walnuts.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes.
- Invert onto wire racks and let cool completely before frosting.
- Beat cream cheese and butter together until smooth and creamy.
- Gradually add powdered sugar, mixing after each addition.
- Stir in vanilla extract and lemon juice, if using.
- Spread frosting evenly over the cooled cakes.
