Cheesy Beef and Rice Casserole

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, over medium heat, add the ground beef and diced onion. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Stir occasionally to break up the beef and ensure even cooking. Drain any excess fat.
  3. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper to the beef mixture. Mix well.
  4. To the beef mixture, add the uncooked rice, diced tomatoes (with juice), and beef broth. Stir everything together until well combined.
  5. Pour the beef and rice mixture into a greased 9x13-inch baking dish, spreading it evenly. Cover the dish with aluminum foil.
  6. Place the covered casserole in the preheated oven and bake for 30 minutes.
  7. After 30 minutes, remove the foil and sprinkle the cheddar cheese over the top. Return to the oven and bake uncovered for an additional 10-15 minutes.
  8. Once done, remove from the oven and sprinkle with mozzarella cheese. If desired, put back in the oven for another 5 minutes until mozzarella is melted and lightly golden. Garnish with fresh parsley before serving.
