1 pound ground beef
1 medium onion, chopped
2 cloves garlic, minced
4 medium potatoes, thinly sliced
1 cup cheddar cheese, shredded
1 cup cream of mushroom soup
1 cup milk
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 cup frozen mixed vegetables (optional)
1 cup French fried onions (optional)
Extra cheese for topping (if desired)
Fresh parsley for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, brown the ground beef along with the chopped onion and minced garlic for about 5-7 minutes. Drain excess fat if necessary.
Stir in the salt, black pepper, and dried thyme. Mix in frozen mixed vegetables if using, and let the mixture cool slightly.
In a separate bowl, whisk together the cream of mushroom soup and milk until smooth.
In a greased 9x13-inch baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the creamy sauce. Repeat these layers with the remaining potatoes, beef, and sauce.
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes until the top is golden brown and the potatoes are tender.
If desired, add French fried onions on top during the last 5 minutes of baking.
Allow to cool for about 10 minutes before serving.
