2 cups shredded cheddar cheese

1/4 cup grated Parmesan cheese

Instructions
Preheat the oven to 350°F (175°C).
In a large pot, bring salted water to a boil. Add the cauliflower florets and cook for about 5 minutes, or until they are just tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Whisk in the flour until a paste forms and cook for 1-2 minutes.
Gradually whisk in the milk, stirring until the mixture thickens, about 5-7 minutes.
