This recipe for cheesy cauliflower steaks transforms humble cauliflower into a gourmet delight. Roasting or grilling enhances its flavor, while the creamy cheese sauce adds indulgence.

1 large head of cauliflower
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1 cup shredded cheddar cheese
1/2 cup cream cheese
1/2 cup milk (or any plant-based milk for a vegan option)
1 tablespoon Dijon mustard
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional, for a spicy kick)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C) or prepare your grill for medium-high heat.
Remove the leaves from the cauliflower and trim the stem slightly. Cut the cauliflower into 1-inch thick slices to create 'steaks.'
In a small bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Brush this mixture on both sides of each cauliflower steak.
If baking, place the cauliflower steaks on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, flipping halfway through. If grilling, place the steaks on the grill and cook for about 5-7 minutes per side.
In a saucepan over medium heat, combine the shredded cheddar cheese, cream cheese, milk, Dijon mustard, black pepper, and cayenne pepper (if using). Stir until the cheese has melted and the sauce is smooth.
Once the cauliflower steaks are cooked, drizzle the creamy cheese sauce over the top of each steak.
Sprinkle fresh parsley on top and serve warm as a main dish or a flavorful cauliflower side.
