Cheesy Sausage and Potato Bake

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the sliced potatoes and chopped onion. Drizzle with olive oil and season with salt, pepper, and paprika. Toss to coat the potatoes and onion evenly.
  3. In a separate bowl, mix the grated cheddar and mozzarella cheese.
  4. In a large skillet, cook the sliced sausage over medium-high heat until browned, about 5-7 minutes. Remove the cooked sausage from the skillet and set aside.
  5. In the same skillet, add the minced garlic and cook for 1-2 minutes until fragrant.
  6. In a greased 9x13-inch baking dish, arrange a layer of potatoes, followed by a layer of cooked sausage, and then a sprinkle of cheese. Repeat this process until all the ingredients are used, ending with a layer of cheese on top.
  7. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and continue baking for an additional 20-25 minutes, or until the top is golden brown and the potatoes are tender.
  8. Remove the dish from the oven and let it cool for a few minutes before serving.
