Chicken a la King is a classic American dish known for its rich, creamy sauce and tender sautéed chicken, complemented by mushrooms and bell peppers.
Ingredients
Scale:
2 cups cooked chicken breast, diced
1 cup mushrooms, sliced
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/4 cup frozen peas
1/4 cup unsalted butter
1/4 cup all-purpose flour
2 cups chicken broth
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Fresh parsley, chopped
Toasted bread or pastry shells (optional)
Instructions
In a large skillet over medium heat, melt the unsalted butter until it begins to foam. Add the sliced mushrooms and diced bell peppers. Sauté until the vegetables are tender and the mushrooms are golden brown, about 5-7 minutes.
Sprinkle the all-purpose flour over the sautéed vegetables and stir continuously for 1-2 minutes to cook out the raw flour taste.
Gradually whisk in the chicken broth, ensuring there are no lumps. Bring the mixture to a gentle boil, stirring until it thickens, about 3-5 minutes.
Reduce the heat to low and stir in the heavy cream, salt, black pepper, and paprika. Simmer for an additional 3 minutes.
Add the diced chicken and frozen peas to the skillet, stirring until the chicken is heated through, about 3-4 minutes.
Adjust seasoning to taste. Serve the Chicken a la King over toasted bread, pastry shells, or with a side of rice or pasta.
