Ingredients
Scale:
2 cups cooked chicken, shredded or diced
2 cups heavy cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
4 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
9-12 lasagna noodles (no-boil or regular)
2 cups fresh spinach or other vegetables (optional)
1 tablespoon olive oil
1 cup shredded mozzarella cheese (for topping)
1/2 cup grated Parmesan cheese (for topping)
Instructions
Preheat your oven to 375°F (190°C).
In a saucepan over medium heat, melt 1 tablespoon of olive oil and sauté the minced garlic until fragrant, about 1 minute. Add the heavy cream, salt, pepper, and nutmeg. Allow it to simmer for 2-3 minutes. Stir in the Parmesan cheese until melted and smooth.
In a large bowl, combine the cooked chicken with half of the Alfredo sauce. If using, add the fresh spinach or other vegetables to the mixture.
Spread a thin layer of the remaining Alfredo sauce on the bottom of a 9x13 inch baking dish. Place a layer of lasagna noodles on top, followed by half of the chicken mixture. Add another layer of noodles, then half of the remaining Alfredo sauce. Repeat with another layer of noodles and the remaining chicken mixture. Top with a final layer of noodles and pour the remaining Alfredo sauce over the top.
Sprinkle the shredded mozzarella and Parmesan cheese evenly over the top layer of Alfredo sauce.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden brown.
Let the Chicken Alfredo Lasagna cool for about 10 minutes before slicing and serving.
