3 cups cooked chicken, shredded or diced
6 slices of bacon, cooked and crumbled
1 cup cooked pasta (e.g., rotini or penne)
1 can (10.5 oz) cream of chicken soup
1 cup sour cream
1 packet (1 oz) ranch seasoning mix
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
1 cup crushed potato chips or breadcrumbs (optional)
Extra shredded cheese (for topping)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cooked chicken, crumbled bacon, cooked pasta, cream of chicken soup, sour cream, ranch seasoning mix, and frozen mixed vegetables. Stir well until all ingredients are evenly coated.
Transfer the mixture into a greased 9x13-inch casserole dish, spreading it out evenly.
Sprinkle 1 cup of shredded cheddar cheese evenly over the top of the chicken mixture.
If using, sprinkle the crushed potato chips or breadcrumbs over the cheese.
Place the casserole in the preheated oven and bake for 30-35 minutes, or until the cheese is melted and bubbly.
Once baked, remove the casserole from the oven and let it cool for a few minutes before serving.
