A creamy chicken casserole that embodies the essence of home-cooked comfort food. This dish combines tender chicken, earthy mushrooms, and a luscious creamy sauce, perfect for busy evenings or family gatherings.

3 cups cooked chicken, shredded or cubed
1 can (10.5 oz) cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese, plus extra for topping
1 cup crushed butter crackers (like Ritz or Saltines)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the cooked chicken, cream of mushroom soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, sliced mushrooms, garlic powder, onion powder, salt, and pepper. Stir until well combined.
Transfer the chicken mixture into a greased 9x13 inch baking dish, spreading it out evenly.
In a separate bowl, mix the crushed butter crackers with a tablespoon of melted butter.
Sprinkle the buttery cracker mixture evenly over the top of the casserole, followed by an extra handful of shredded cheddar cheese.
Bake in the preheated oven for 30-35 minutes, or until bubbly and golden brown. Cover with aluminum foil for the first 20 minutes to prevent over-browning.
Once done, remove from the oven and let it sit for about 5-10 minutes before serving.
