1 cup celery, chopped
1/2 cup red grapes, halved
1/2 cup walnuts, chopped

1/4 cup fresh parsley, chopped
1/2 cup mayonnaise (or Greek yogurt for a healthier alternative)
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste

Instructions
Prepare the Chicken: If you don’t have cooked chicken on hand, poach or grill 2-3 chicken breasts until fully cooked, about 20-30 minutes. Allow to cool before dicing.
