Chocolate Haystacks are the ultimate no-bake chocolate dessert that combines the delightful flavors of chocolate and coconut with a satisfying crunch. This classic treat has a nostalgic charm, often bringing back memories of holiday gatherings or childhood bake sales.
Ingredients
Scale:
2 cups shredded coconut (sweetened or unsweetened, according to preference)
1 cup quick-cooking oats
2 cups semi-sweet chocolate chips
½ cup peanut butter (creamy or chunky)
1 tsp vanilla extract
Chopped nuts (optional)
Sprinkles (optional)
Instructions
In a microwave-safe bowl, combine the semi-sweet chocolate chips and peanut butter. Microwave in 30-second intervals, stirring after each interval, until the mixture is smooth and fully melted (this usually takes about 1-2 minutes).
Once melted, remove from the microwave and stir in the vanilla extract until well combined.
Next, fold in the shredded coconut and quick-cooking oats. Mix thoroughly until everything is evenly coated in the chocolate mixture.
Using a spoon or ice cream scoop, drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Shape them into small mounds or haystack shapes.
Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate is firm and the haystacks hold their shape.
