Ingredients
Scale:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
4 large eggs
1 teaspoon vanilla extract
2 cups mixed dried fruit (raisins, currants, chopped dates, and apricots)
1 cup mixed nuts (walnuts and pecans), chopped
Powdered sugar for dusting (optional)
Glaze made from water and powdered sugar (optional)
Instructions
Preheat your oven to 325°F (165°C). Grease and flour a 9x13 inch baking pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, spices, and salt. Set aside.
In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-5 minutes.
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract.
Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix.
Gently fold in the dried fruits and nuts until evenly distributed throughout the batter.
Pour the batter into the prepared baking pan, smoothing the top with a spatula. Bake in the preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
If desired, prepare a simple glaze by mixing powdered sugar with a small amount of water until smooth, then drizzle over the cooled cake. For added decoration, dust with powdered sugar before serving.
