  3. In a large mixing bowl, combine the olive oil or melted butter with garlic powder, onion powder, smoked paprika, dried herbs, salt, and pepper. Mix until all ingredients are well blended.
  4. Add the potatoes to the bowl and toss them in the coating mixture until every piece is evenly covered.
  5. Spread the coated potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are golden brown and crispy on the outside. The edges should be nicely caramelized.
