Chicken and Dumplings

  1. In a large pot or Dutch oven, sauté the chopped onions, garlic, carrots, and celery in a little bit of oil until they are tender and fragrant.
  2. Add the chicken to the pot and cook until it is browned on all sides and cooked through.
  3. Pour in the chicken broth, thyme, basil, salt, and pepper, and bring the mixture to a boil.
  4. Reduce the heat to a simmer and let the chicken and vegetables cook for 10-15 minutes, or until the chicken is tender and the vegetables are cooked through.
  5. While the chicken is cooking, prepare the dumplings by whisking together the flour, baking powder, and salt in a large bowl.
  6. Add the melted shortening or butter and warm water to the bowl, and stir the mixture until it forms a sticky dough.
