Ingredients
Scale:
1 pound lump crab meat, picked over for shells
1/2 cup mayonnaise
1 large egg
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper (optional)
1/2 cup breadcrumbs (preferably panko)
Salt and pepper, to taste
2 tablespoons olive oil (for pan-frying)
Butter (optional, for additional flavor)
1/2 cup mayonnaise (for the dipping sauce)
1 tablespoon Dijon mustard (for the dipping sauce)
1 tablespoon lemon juice (for the dipping sauce)
1 teaspoon hot sauce (for the dipping sauce)
Instructions
Prepare the Crab Mixture: In a large mixing bowl, gently combine the lump crab meat, mayonnaise, egg, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, and cayenne pepper. Be careful not to break up the crab meat too much; you want to maintain some chunks for texture.
Add the Breadcrumbs: Gradually fold in the breadcrumbs until just incorporated. Season with salt and pepper to taste.
Chill the Mixture: Cover the bowl with plastic wrap and refrigerate the mixture for at least 30 minutes.
Form the Cakes: After chilling, remove the mixture from the refrigerator. Using your hands, form the mixture into patties about 3 inches in diameter and 1 inch thick.
