1 pound ground beef
1 medium onion, diced
1 bell pepper, diced
1 can (15 oz) sweet corn, drained
1 can (10 oz) diced tomatoes with green chilies
1 packet taco seasoning
1 cup shredded cheddar cheese
1 cup cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 tablespoon sugar
1 cup milk
2 large eggs
1/4 cup vegetable oil or melted butter
Instructions
Preheat your oven to 400°F (200°C).
In a large skillet over medium heat, brown the ground beef, then drain excess fat. Add diced onion and bell pepper, sautéing until softened.
Stir in sweet corn, diced tomatoes, and taco seasoning. Cook for 5 minutes, then remove from heat and stir in half the cheddar cheese.
In a bowl, combine cornmeal, flour, baking powder, salt, and sugar. In another bowl, whisk milk, eggs, and oil, then mix with dry ingredients until just combined.
Spread the beef mixture in a greased 9x13-inch baking dish, then pour cornbread batter on top.
Bake for 25-30 minutes until the topping is golden brown and a toothpick comes out clean.
In the last 5 minutes, sprinkle the remaining cheese on top and return to the oven until melted.
