1 cup black-eyed peas, drained and rinsed
1 cup black beans, drained and rinsed
1 cup sweet corn, drained
1 red bell pepper, diced
1 green bell pepper, diced
1 large avocado, diced
1/2 red onion, finely chopped
1/2 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
1/4 cup olive oil
2 tablespoons lime juice
1 tablespoon red wine vinegar
1 teaspoon cumin
Salt and pepper to taste
Instructions
Prepare the Base: In a large mixing bowl, combine the black-eyed peas, black beans, sweet corn, red bell pepper, and green bell pepper. Mix well to ensure an even distribution.
