2 pounds fresh spinach, washed and trimmed
1 medium onion, chopped
2 cloves garlic, minced
1 cup heavy cream
1 cup sour cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese

1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
2 tablespoons olive oil or butter
Instructions
Preheat the oven: Set your oven to 350°F (175°C).
Sauté the vegetables: In a large skillet over medium heat, add the olive oil or butter. Once melted, add the chopped onion and cook for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute until fragrant.
Cook the spinach: Gradually add the fresh spinach to the skillet, stirring until wilted, about 3-5 minutes. If using frozen spinach, add it directly to the skillet and cook until heated through.
Prepare the cream mixture: In a large bowl, combine the heavy cream, sour cream, Parmesan cheese, salt, pepper, and nutmeg. Mix well until smooth.
Combine spinach and cream: Once the spinach is cooked, remove it from the heat and mix it into the cream mixture until all ingredients are evenly coated.
Transfer to baking dish: Pour the creamed spinach mixture into a greased 9x13-inch baking dish. Spread evenly.
Add cheese topping: Sprinkle the shredded mozzarella cheese and breadcrumbs evenly over the top of the casserole.
Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbly.
Cool and serve: Allow to cool for a few minutes before serving. This allows the casserole to set slightly for easier serving.
