4 cups frozen hash browns, thawed
2 cups cooked chicken, shredded or diced
1 cup shredded cheddar cheese
1 cup cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup diced onion
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt and pepper to taste
1 cup crushed cornflakes or breadcrumbs
2 tablespoons melted butter
Additional cheese for sprinkling (optional)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the thawed hash browns, cooked chicken, 1 cup of cheddar cheese, cream of chicken soup, sour cream, milk, diced onion, garlic powder, paprika, salt, and pepper. Mix until well combined.
Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
In a small bowl, mix the crushed cornflakes with melted butter until well coated. Sprinkle this mixture evenly over the top of the casserole.
If desired, sprinkle additional cheese on top.
Bake in the preheated oven for 45-55 minutes, or until bubbly and golden brown.
Once cooked, remove from the oven and let it rest for about 10 minutes before serving.
