A vibrant salad combining the sweetness of peas with the savory crunch of bacon, perfect for summer gatherings.
Ingredients
Scale:
- 4 cups of fresh or frozen peas (thawed if frozen)
- 6 slices of crispy bacon, chopped
- 1 cup of celery, finely chopped
- 1 cup of red onion, finely diced
- 1 cup of shredded cheddar cheese
- 1/2 cup of roasted sunflower seeds or chopped nuts
- 1 cup of mayonnaise
- 1/4 cup of sour cream
- 2 tablespoons of apple cider vinegar
- 1 tablespoon of sugar
- Salt and pepper to taste
Instructions
- Cook the bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Remove from skillet and place on a paper towel-lined plate.
- In a medium bowl, combine mayonnaise, sour cream, apple cider vinegar, and sugar. Whisk until smooth. Season with salt and pepper to taste.
- In a large mixing bowl, add thawed peas, celery, red onion, and cheddar cheese. Toss gently to mix.
- Pour the creamy dressing over the salad mixture. Fold until well coated.
- Gently fold in the crispy bacon and sunflower seeds or nuts.
- Cover and refrigerate for at least two hours before serving.
