1 teaspoon dried Italian herbs (oregano, basil, thyme)
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon butter
2 tablespoons butter
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it with cooking spray.
Place the chicken breasts between two pieces of plastic wrap. Gently pound them with a meat mallet until they are about 1/2 inch thick.
Season the chicken breasts with salt, pepper, and garlic powder.
Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs, grated Parmesan cheese, and dried Italian herbs.
Dip each chicken breast first in the flour, shaking off any excess, then into the egg, and finally coat with the breadcrumb mixture.
In a large skillet, heat olive oil and butter over medium heat until the butter is melted and the mixture is hot. Add the chicken breasts and cook until golden brown on both sides, about 3-4 minutes per side. Transfer the chicken to the prepared baking sheet.
Bake the chicken in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
While the chicken is baking, prepare the creamy garlic sauce. In a saucepan over medium heat, melt the butter and sauté the minced garlic until fragrant, about 1 minute.
Stir in the flour and cook for another minute. Gradually whisk in the chicken broth and heavy cream, ensuring no lumps form.
Let the sauce simmer for 5-7 minutes, stirring frequently, until it thickens. Add grated Parmesan cheese, salt, and pepper to taste. Continue to stir until the cheese is completely melted and the sauce is smooth.
Once the chicken is done, remove it from the oven and let it rest for a few minutes. Serve the chicken topped with creamy garlic sauce and garnish with chopped parsley.
