A classic comfort food dish made with chicken, vegetables, and dumplings in a Crock Pot.
Ingredients

1 pound boneless, skinless chicken breasts or thighs
4 cups of chicken broth
2 tablespoons of butter
1 medium onion, diced
2 cloves of garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1 teaspoon of dried thyme
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 cups of all-purpose flour
2 teaspoons of baking powder
1/4 teaspoon of salt
1/4 cup of shortening or butter, melted
3/4 cup of warm water
Instructions
In the Crock Pot, combine the chicken, chicken broth, butter, onion, garlic, carrots, celery, thyme, salt, and pepper. Stir to combine.
Cook the mixture on low for 6-8 hours or on high for 3-4 hours.
About 30 minutes before serving, make the dumplings. In a large bowl, combine the flour, baking powder, and salt. Cut in the shortening or butter until the mixture resembles coarse crumbs.
Gradually add the warm water to the bowl, stirring with a fork until the dough comes together.
Turn the dough out onto a floured surface and knead for 2-3 minutes, until the dough is smooth and elastic.
Divide the dough into 8-10 equal pieces and shape each piece into a ball.
When the chicken mixture has finished cooking, add the dumplings to the pot. Cover the pot and cook for an additional 30 minutes, or until the dumplings are cooked through and have floated to the surface.
Serve the Crock Pot Chicken And Dumplings hot, garnished with chopped fresh herbs or a sprinkle of paprika, if desired.
