Ingredients
Scale:
- 2 large cucumbers, sliced into rounds (about 1/4 inch thick)
- 3 medium tomatoes, diced into bite-sized pieces
- 1 small red onion, thinly sliced
- 1 bell pepper (any color), chopped into small chunks
- 1/4 cup fresh parsley, chopped finely
- 1/4 cup fresh basil, chopped
- 1/4 cup high-quality olive oil, preferably extra virgin
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper, to taste
Instructions
- Prepare the salad dressing by whisking together olive oil, red wine vinegar, Dijon mustard, salt, and pepper in a small bowl. Set aside.
- Wash the vegetables thoroughly under cold running water. Slice cucumbers into thin rounds.
- Dice the tomatoes into bite-sized pieces and place them in a large mixing bowl.
- Chop the bell pepper into small chunks and thinly slice the red onion. Add these to the bowl with the tomatoes.
- Roughly chop the parsley and basil and add them to the mixing bowl.
- Gently toss all the vegetables and herbs together.
- Drizzle the prepared salad dressing over the vegetable mixture and toss gently until coated. Allow to rest for 10-15 minutes before serving.
