Ingredients

2 cups of cucumbers, sliced (preferably garden-fresh)
2 cups of ripe tomatoes, chopped
1 small red onion, thinly sliced
1/4 cup extra-virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
1/4 cup crumbled feta cheese (optional)
1/4 cup chopped fresh parsley (optional)
Instructions
Prepare the vegetables: Begin by slicing the cucumbers into even rounds. Chop the tomatoes into similar-sized pieces, and thinly slice the red onion.
Mix the dressing: In a small bowl, combine the olive oil, red wine vinegar, lemon juice, and oregano. Whisk until smooth and season with salt and pepper.
Combine ingredients: In a large salad bowl, toss together the cucumber, tomato, and onion. Pour the dressing over the salad and gently mix until all ingredients are well-coated.
