A light, refreshing salad combining the crispness of cucumbers with the tangy flavors of ranch dressing.
Ingredients
Scale:
- 4 medium cucumbers, sliced into thin rounds
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 cup sweet bell peppers, diced
- 1/2 cup green onions, chopped
- 1 cup ranch dressing
- 1 tablespoon apple cider vinegar (optional)
- 1/2 cup bacon bits (or turkey bacon)
- 1/2 cup shredded cheddar cheese
- 1/4 cup sunflower seeds or chopped nuts
Instructions
- Rinse the cucumbers, cherry tomatoes, bell peppers, and red onion under cold water and pat dry.
- In a large mixing bowl, combine the sliced cucumbers, halved cherry tomatoes, red onion, diced bell peppers, and chopped green onions and toss gently.
- In a separate bowl, whisk together the ranch dressing and apple cider vinegar (if using) until smooth, then pour over the salad base.
- Gently fold in the bacon bits, shredded cheddar cheese, and sunflower seeds or nuts.
- Cover and refrigerate for at least 30 minutes, then serve chilled.
