  1. In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, pepper, and garlic powder. Mix well to combine.
  2. Heat the vegetable oil in a large non-stick frying pan over medium-high heat.
  3. Using a spoon, drop small amounts of the potato mixture into the hot oil, flattening them slightly with a spatula.
  4. Cook the pancakes for about 4-5 minutes on each side, or until they are golden brown and crispy.
  5. Repeat the process until all the potato mixture is used up.
  6. Drain the pancakes on paper towels and serve hot with your choice of topping.
