1 cup water
1/2 cup unsalted butter
1 cup all-purpose flour
1/4 teaspoon salt
4 large eggs
1 cup heavy cream (for filling)
1/4 cup powdered sugar (for filling)
1 teaspoon vanilla extract (for filling)
1 cup heavy cream (for topping)
1/4 cup powdered sugar (for topping)
1 teaspoon vanilla extract (for topping)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a medium saucepan, combine the water and butter. Heat over medium heat until melted, then bring to a rolling boil.
Remove from heat and stir in the flour and salt until a ball forms.
Let the dough cool for about 5 minutes and then add eggs one at a time, mixing well after each addition.
Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet.
Bake for 20-25 minutes until p■ and golden brown, avoiding opening the oven door during baking.
Cool the puffs completely on a wire rack.
Whip 1 cup of heavy cream with 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract until stiff peaks form to make the filling.
Cut a small slit in each cooled puff and fill with the vanilla cream filling.
Whip the remaining 1 cup of heavy cream with 1/4 cup of powdered sugar and 1 teaspoon of vanilla extract for the topping.
