A vibrant salad that combines seasoned ground beef with fresh vegetables, savory toppings, and crunchy Doritos, creating a satisfying and refreshing meal.

1 pound ground beef, preferably 80/20
1 packet taco seasoning mix
1 head romaine lettuce, chopped
1 cup cherry tomatoes, halved
1 cup corn (canned or frozen)
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
1 cup Doritos, crushed (Nacho Cheese or Cool Ranch)
1 cup ranch dressing
1 tablespoon taco sauce (optional)
Instructions
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess grease.
Sprinkle the taco seasoning mix over the cooked beef. Add 2/3 cup of water and stir thoroughly. Simmer on low heat for about 5 minutes.
Chop the romaine lettuce and slice the cherry tomatoes in half. Rinse the corn and black beans under cold water.
In a large bowl, combine the chopped lettuce, tomatoes, corn, black beans, and half of the shredded cheddar cheese. Toss gently.
Once the beef is ready, let it cool slightly before adding it to the salad mixture.
In a separate bowl, combine the ranch dressing and taco sauce (if using). Drizzle over the salad and toss well.
Just before serving, sprinkle the crushed Doritos and the remaining cheddar cheese on top.
