These delightful patties are not only incredibly simple to make but also packed with protein and omega-3 fatty acids, making them a healthy choice for any meal of the day.
Ingredients
Scale:
1 cup breadcrumbs (use gluten-free if needed; consider panko for extra crunch)
1 teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper to taste
1 (14.75 oz) can of salmon, drained
2 large eggs
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
¼ cup finely chopped green onions or bell peppers (optional)
2 tablespoons fresh parsley, chopped (optional)
2-3 tablespoons cooking oil (for frying)
Instructions
In a large mixing bowl, flake the drained salmon using a fork. Ensure there are no large bones or skin pieces left intact.
Add the eggs, mayonnaise, and Dijon mustard to the bowl with the flaked salmon. Mix until well combined.
Gradually incorporate the breadcrumbs, garlic powder, onion powder, salt, and pepper into the mixture. Stir until fully combined.
If using, fold in the finely chopped green onions, bell peppers, or parsley.
With clean hands, form the mixture into patties, approximately 2-3 inches in diameter and about ¾ inch thick.
In a large skillet, heat 2-3 tablespoons of oil over medium heat. Ensure the oil shimmers but does not smoke.
Fry the patties for 3-4 minutes on each side until golden brown and crispy.
