  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chicken breasts and season with salt and pepper. Cook for about 6-7 minutes on each side, or until cooked through and golden brown. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C). Remove the chicken from the pot and let it rest for a few minutes before shredding.
  2. In the same pot, add the diced onion, bell pepper, and minced garlic. Sauté for about 3-5 minutes, or until the vegetables are soft and fragrant.
  3. Pour in the chicken broth and add the can of diced tomatoes, along with their juices. Add the black beans, corn, chili powder, and cumin. Stir well to combine, and let the mixture come to a gentle boil over medium-high heat.
  4. Shred the cooked chicken using two forks. Once the soup is boiling, add the shredded chicken back into the pot. Reduce the heat to low and let the soup simmer for about 15 minutes.
