- 1/2 cup mini marshmallows
- 1/4 cup Greek yogurt or sour cream
- 1/4 cup chopped green onions (for garnish)
- 1/4 cup chopped red bell pepper (optional, for color and crunch)
- Crackers or fresh fruit for serving
Instructions
- In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth and creamy. Aim for a fluffy consistency.
- Add the drained crushed pineapple, shredded coconut, and Greek yogurt (or sour cream) to the bowl. Mix until well combined.
- Gently fold in the mini marshmallows, ensuring they are evenly distributed without breaking them apart.
- If desired, mix in the chopped red bell pepper for an extra crunch and pop of color.
