Ingredients
Scale:
2 pounds potatoes (preferably Yukon Gold or red skin)
3 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1 teaspoon salt, to taste
½ teaspoon freshly ground pepper
Instructions
Preheat your oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly to remove any dirt.
Chop the potatoes into even-sized chunks, about 1 to 1.5 inches.
In a large mixing bowl, combine the potato chunks with olive oil, minced garlic, chopped rosemary, salt, and pepper. Toss until all pieces are well coated.
Spread the seasoned potatoes out in a single layer on a parchment-lined baking sheet.
Place the baking sheet in the preheated oven and roast for 25 minutes.
Remove the sheet and toss the potatoes with a spatula to ensure even cooking.
Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and crispy.
Once done, remove the potatoes from the oven and let them cool slightly. Serve warm as a side dish or snack.
